these pesky little anemones popped up about 4 weeks ago in my 40g and i cant seem to get rid of them. I added 3 peppermint shrimp to eliminate the problem, but the peppies cant seem to consume them fast enough. Should i add more shrimp, or is there another solution other than ripping the anemone out?

there are a couple products that you can buy online or possibly at your LFS... one I might suggest is Joe's juice, it seems to take care of the problem pretty well. Another thing you could do is get a syringe and vinegar and go to town on them. Good Luck

Joes juice is good or if you want to go cheaper you can use hot water that you insert in the mouth the aiptasia.
It work for me and I read that trick on this forum.

I use the vinegar trick. Make sure to sneak up on it and inject into its mouth. I also only use 1ml a day so as not to mess with my ph ( have a 120). It only takes a little for each aiptasia and it's fun to watch them shrivel up. Where I live, entertainment is hard to come by!

Sounds more like a nutrient problem.
Try improving your water quality.
The peppermints seem to prey largely on the young aiptasia. Maybe they taste better. I have about six old ones that the peppermints never get, in places where they actually do no particular harm, but I have noticed that there are no more little ones popping up here and there. Also, the peppermints will not eat them if the alkalinity of the water is too low. Go figure.
