Starboard cuts pretty easy. What tools do you have and how thick is the starboard? I used a tablesaw to cut 3/8 inch. A handsaw, jigsaw, circular saw or bandsaw will all work.

Jigsaw is probably the easiest. I would trace the outline of the overflow on and then just jigsaw it

I have a bowfront and I did just what you said. I traced the outline on the starboard and used a jigsaw. Cuts like a hot knife through butter.
