I know it's common but what is it called? Also what does it appear to be doing? Usually it's just spread out.

Just a plain old green striped mushroom. They do things like that at times. It could be getting too much light if you've changed the position/light/etc. If nothing changed just leave it. It may even decide to move and let some youngin's grow under where it was.

Whatever it's doing.....my plain old green mushroom is doing the same exact thing !

It is commonly called a Green Striped Mushroom and it's your run of the mill Actinodiscus (=Discosoma)
