i'm sure it's been asked before, but is there an extension available for the temperature probe?

That's a very good question since that cord is by far the shortest on the RK2.

We don't have any extensions but we have had a few customers cut the wire in half and splice additional in between. You can add 10's of feet without any performance impact. You can't really break the probe as long as you leave enough wire on each side of the cut.

That is an option for you. If you DO break the probe they are only $15 to replace, but I highly doubt that you would break anything.

Any suggestions on what type/kind of wire that should be used to splice in?

Not really, there is 24 AWG wire in the probe, but 22/26/28 AWG is slightly easier to find. The rating isn't important, I would recommend using wire that comes bundled so you don't have 2 separate conductors.

Any idea on if the Neptune temp extension cord would work?

All the way on the bottom right. Not much info so probably can't tell:

Not sure, I don't know anything about that cable. But now that I think about it, there is probably a standard phone cable that could be used for it. It would need a female connector on one side and a male on the other. The trick is to find one that will work for the 6 pin connector. I'll keep my eyes out for something like that and let you know if I find anything.
