every time i top off my water level from evaporation my skimmer goes nuts and pulls out almost 2 gallons of water in less than a day is this normal and due to water level change and possible chemical change or does it sound like a problem also the water it pulls has very little color so i know there is very little protein in it any advice

Do you use a dechlorinater for top-off? If not, it could simply be the change in water level.

no i usually just add straight ro every 2-3 day in amounts of up to 5g

You really should add it every day in order to keep your salinity as stable as possible.

i get the water at my lfs and they add buffer and declorinizer prior to selling it

If it's not RO/DI water than why don't you just use your tap water and put declor and buffer in it and save yourself some time and money?

It's going crazy taking the dechlorinator out. Real RO/DI should have no need for dechlorinator. The pH buffer doesn't do anything though. May as well buy RO water from the store for now and add a pinch of pH buffer yourself.
