I just bought a Twin Spot Goby at the lfs. The guy there told me they sift the sand for microscopic particles, and filter those particles out of through their gills .
Is this accurate? And will they eat prepared foods like frozen Mysis and flake?

Yes, that's accurate. They will eat the prepared food if you can get it ahead of them when they sift the sand. It's debatable whether they can survive like this. IME, they should only be kept in pairs.

What does keeping them in pairs do?

Its said that they are just happier and tend to live longer because of the companionship...they eat both the stuff from the sand and meaty foods, one of the reason they are harder to keep alive is because they tend not to eat frozen...and that food they lack they need to live.
