I love the look of zoanthids and have heard they are hardy and easy to keep. But, I've been warned that they tend to take over a tank. Is this true and what species of zoanthids are best kept with other softies?

IME, zoas are very hardy and easy to keep. They do spread, too, which is usually welcomed :)
Some zoas (and palys) will spread fast, and some slow. My observation is that the really pretty ones spread slower, and the less attractive (brown) spread faster...
As far as what species of zoas, I think they are all basically the same when it comes to compatibility with other corals. I have never had a problem with zoas and other softies.
Oh, BTW, in regards to taking over a tank, zoas would be pretty slow in doing that...although over time I could see it happening. What will overtake a tank relatively fast are xenia & green star polyps!

Yup, a tank covered in zoas is a pretty sight.
Don't be fooled though. Zoas are not all easy. In fact, sometimes they're impossible. Learn as much as you can about them first and then decide.
They can be expensive and sometimes the most costly ones are the hardest to keep.
