I have a 65 gallon with gorilla crabs in it.

YES!
I'd go with a Huma Huma or maybe a Snowflake or Zebra Eel; any of the three have crustaceans on their diet.

Won't a trigger or eel eat all my good crabs, like hermits, maybe starfish, corals. Are they strictly carnivorous?

You're not gonna find something that will eat only bad crabs and leave invertebrates you want alone.
