I want to drill 3 holes on the back of my tank to put 90 degree PVC overflow pipes on it.

The question i have is: Do you all think that (3) 1 inch bulkheads will be enough? ... or should i go for a larger size?

-I have a 75 gallon tank-

what are you using the holes for and what are you keeping?

I would drill one 1" overflow/drain and two 1" holes for a closed loop. So I guess your answer would be yes.. For the return, just go over the back unless you want it in your overflow box. Then you need to drill another for the return.

1" would be ideal for a 75

My plan is to feed 2 of the overflows to the sump.

Then feed 1 overflow to a recirculating skimmer.

Thats why I think that 3 would be better; because it would slow the flow going into the RC skimmer. I have also read that the thinner of a film of water that you overflow from the surface of yor main tank, the more effecient an in sump skimmer will be.

The good thing is that if you decide to change your mind later...you can always just drian the tank a little & drill more holes or bigger holes!
So experiment with 1" BH's & see if that works for you.
