The magnetized doors/panels will not add anything structural to the stand.
No you dont have to skin the whole exterior of the stand. But that is a lot of weight that could start shifting around.

You will have plenty of access to the inside if you sheet the entire back, and both sides, and the front. But when you sheet the sides and front use a full sheet of plywood, then cut out the opening flush with the framing opening. This will help the racking issue. Glue on the plywood and nail the **** out of it, every 2 ''. you can fill the nail holes with either color putty or spackle. Depending on the finish.
