Id go 8. You can always shorten the daily exposure time, or leave 2 off, but you cant make up for being short 2 bulbs when you need it. I like 8 because it allows you to do better bulb mixing, esp if you like a more blue look (blue bulbs tend to have slightly lower outputs, so you can use an extra bulb or two to make up for it).
Considering most 120s that I know of that look 'sweet' use dual 250wattDE halides, and 4x54wattT5s for lighting (blue+ and actinic bulbs), thats about 716 watts... alot of it being 10,000K halides. 8x54watt bulbs is only 432 watts... now I know T5s are bright, but only having 324 watts of it might be cutting it a little too short. In particular, if you want mostly SPS and higher light stuff... id stick with the 8 rows. Heck, if it was me, Id try to cram 9 or maybe 10 bulbs in there...lol.
