How many triple puck kits
How many triple puck kits should I plan to use above a 36"x18"x24" deep tank with the fixture about 12" above the water?

You'll want about 36 LEDs for a SPS dominated tank, ~28-30 total LEDs for a softies/LPS tank. You can try one kit for now and see how you like the light, if it's not enough you can always add more later.

I guess I should have specified that it is a mix of SPS, LPS, and zoas. I will go with two for now, I can always dim them down with my apex. Is the drilled and tapped black heatsink with splash guard back in stock yet?

The normal kit comes with an undrilled/untapped heatsink, if you don't mind having one of our other drilled/tapped heatsinks then you can order now and that's what we'll send (please note the heatsink isn't drilled/tapped to fit the pucks, just our normal LEDs so you wouldn't be able to screw the pucks down).

That's right, the drilled heatsink isn't drilled for the triple puck so you'll essentially just ignore those holes.
