Is there any way to erase all the historical values?

I got a new Apex gold the other day and I've spent the last couple of days getting it set up and running. As I look through the graphs of things like temp and conductivity and pH and such there are a lot of spikes and dips from when the probes were out of the water and being calibrated and such. Is it possible to erase all of that old data (without wiping the whole thing) and just start recording data from this point forward?

And as a somewhat related question, is there any way to put it into some sort of maintenance mode where it won't record data next time I need to move or calibrate the probes?
