Weighing Sodium bicarbo before or after cooking?
Noticed that the 594 g of Sodium bicarb loose around 100 g after cooking, Not sure if it's because of the humidity they lose...
should I add some more so that the amount of cooked sodium bicarb I mix with water is 594g or just cook 594g and then use whatever remains after cooking?

You use the baked baking soda as is after cooking. You don't add more to it.
Cooking the baking soda removes water and CO2 which is what causes the reduced weight.
