Too much GAC?
Can you put too much GAC in a reactor that would be dangerous for the live stock?

Unless you are in the school that believes HLLE is caused by GAC.

Well there is dosing directions on the packaging. Not sure if it matters? It says 1/2 cup per 50 gallons. That seems quite small for a reactor.

I'm not sure on that one, but somee brands have substantial fines (black dust on rinsing) and overdoing them can be a potential concern for HLLE. Others, like ROX carbon from BRS seem to have almost no fines, and the risk of overdoing them may be smaller..
