I am on the fence as to which controller to buy. How would I connect the two dimming signal wires to the apex? what accessories would I need?

Neptune sells a cable for $20 that does this. It's got an RJ45 on one end that goes into the controller. The other ends are bare for you to connect to the MW driver(s). Each cable connects to 2 variable speed ports (you have 4). On the driver end, people have reported success connecting 4 or more drivers to each one.
You can also make your own cable, either by making half a network cable or by cutting on in half.

I, personally, think the Neptune cable is a waste of money since you can simply cut the end off a network cable. Well, I guess that might be a little harsh. If you want two separate wires coming off of one RJ45 jack there is some value in it. I'll sell you mine for $1 plus shipping :) I bought one but it is sitting in my junk pile because it was too short.
I am dimming two blue meanwells off V1 and one white meanwell off of V2 (V1 & V2 share a single RJ45). I have a ramp up/down profile for each staggered a touch to give me the blue look in the evening.
No extra parts other than the cable if you have an Apex. I think you need an extra module if you have an Apex Lite.
